Overview
This section will go over the general tasks that should be completed before the store is fully closed and ready for everyone to head on home after a long day of hard work.
Main Tasks
- Take all remaining food items and put them into carry over bags, then splitting them into two different bins for hot and cold food items respectively. After that, take the hot items and put them in an ice bath for around 45 minutes to an hour to let them rapidly cool down. The cold line bin can be put directly into the walk-in.
- Turn off all line equipment, grills, flat top, and the fryers. Then take apart the line and clean every area trying to make it as spotless as possible. Ensure someone is assigned to cleaning both grills using the cleaning agent and scrapping inside the hot well to remove any burned food.
- Assign someone to work on doing the dishes and ensuring each one is spotless and without remant food particles.
- A manager should count the remaining cash drawers and then go into the office to finish closing out the day. Which consists of counting the final deposit of the day, and doing the final counts of all store product left.
- Someone else should be assigned to clean the floors by deck-scrubbing them , mopping, and sweeping to ensure all trash and dirt is removed.
- Remove all taco shells and other product that can be put into a heat cabinet and used for tomorrow.
- After the hot line items have cooled enough, put them back into a tub full of ice and put them into the walk-in.
- Discard any items that would go bad before opening tomorrow.
- Have someone gather all trash bags from every trash can and empty them out to then take the trash and cardboard out to the dumpster for the last trash run of the day.
Side Tasks
- Assign someone to go and clean both the dining room and bathrooms to ensure they aren't dirty.
- Assign someone to restock both the line and drive-thru area for whatever they may be missing after the day is over.
- Ensure new trash bags are put into each trash can.
- Ensure all garbage is cleaned off every table, all employee drinks are thrown out, and all employee food is discarded.
- Always make sure to lock the drive-thru window after close.
- Turn off the lights and lock and close each door before leaving the building once everything is done.
- Ensure everyone clocks out before leaving and that everyone gets out safely.
